Lentil Barley Stew
This is an easy, delicious and healthy stew that will have you coming back for more.
Ingredients:
1/2 c. lentils
1/4 c. pearl or hulled barley
1 qt. vegetable broth
1 small onion, chopped
1 garlic clove, pressed or minced
1 carrot, grated
1 celery stalk, chopped
1/2 t. oregano
1/2 t. cumin
1/4 t. red pepper flakes
1/4 t. black pepper
1/2 -1 t. salt
Bring to a boil the above ingredients and then reduce heat to a simmer for 45 minutes to an hour, or until barley and lentils are soft.
Add the following after barley and lentils are soft:
1 can of coconut milk
1 T. sugar
Heat through and serve.
